Roasted Salmon with Blistered Tomatoes

Ingredients
  

  • 3 salmon fillets about 5 oz. each
  • 6 oz. cherry tomatoes
  • 1/4 cup slivered almonds I got mine from Trader Joe's
  • 2 Tbsp olive oil
  • 1 lemon sliced into thin circles width wise
  • 1 Tbsp paprika
  • 1 Tbsp salt
  • 1 Tbsp garlic powder
  • 1 Tbsp black pepper

Instructions
 

  • Preheat oven to 400 F.
  • On a clean, dry baking sheet, spread out 1/4 cup slivered almonds on sheet.
  • Put into oven for about 3-5 minutes, checking for golden browning. Be careful not to over toast!
  • Once toasted, remove from oven to let cool. They will continue toasting on sheet after you remove from the oven.
  • While the almonds are cooling, line a baking sheet or baking dish with foil.
  • In a small bowl, mix paprika, salt, garlic, and pepper for seasoning blend.
  • Rub olive oil over salmon on both sides (or spray with cooking spray) and season with seasoning blend.
  • Place salmon fillets on baking sheet. Lay lemon slices on top of salmon.
  • Sprinkle cherry tomatoes around salmon fillets.
  • Bake for about 15-18 minutes and then remove from oven.
  • Sprinkle toasted almonds on top to finish and serve.

Notes

The thicker the piece of salmon, the longer the cooking time. If it is a very thick piece, I would reduce cooking temperature to 375 F and increase cooking time in 5 minute increments.
